Mix dry ingredients. Mix wet ingredients. Just before you are ready to cook the pancakes, mix the wet and dry ingredients together with a wire whiski (mix, let set, mix, let set) until the batter is smooth
Pour the batter, 1/4 cup at a time, into a medium hot cast
iron skillet. When the holes that form in the top of the
cake start to stay, turn. The second side should take
about half the time of the first.
